Redstone Cabernet Franc V.Q.A. from the Lincoln Lakeshore appellation of Niagara Peninsula is a medium-bodied, bone-dry Ontario red that opens with aromas of fresh red currant, crushed raspberry, dried herbs, and a cool green pepper note that's pure Cab Franc. On the palate it's bright and focused, with sour cherry, cedar, a hint of pencil shavings, and a long, mineral-driven finish with fine-grained tannins. Winemaker Jessica Otting crafts this wine from the 38-acre organically farmed estate, named for its red clay soil and the large stones that define the property. Redstone was named Canadian Winery of the Year at the National Wine Awards of Canada in 2017. Serve it lightly chilled and drink it now, or cellar it through 2037. Pour it alongside a venison steak with a red currant reduction, where the wine's bright fruit mirrors the sauce, or try it with slow-braised brisket, where its firm structure holds its own against the richness.
