It is nice to see Quebec ciders getting more attention. Often, the products produced are North America's best answer to Normandy's famous Calvados and Pommeau wines.
The apple cultivars chosen for this vintaged cider are McIntosh, Cortland, and Spartan.
Beautiful golden colouration. It glows, like old Chenin Blanc.
The aromas smell of apples baked with cinnamon and white pepper. It is somewhat peachy too. It is heady and reminds me of butter and rolled oats too.
The taste is very honeyed and has tons of fresh acidity. Fruit wines often have aromas dominated by the character of the fruit used, whereas grapes have been artificially selected over aeons to emulate a wide palate of tastes. This means it is very appley, but nonetheless delicious.
Ice ciders do age a long time, like icewine. This already aged example blends age notes and youthful freshness now, but the agenotes will take over as time passes. Try to have this one before 2025, to ensure there is some vitality left to the fresh flavours.
Pair this wine with some Quebec cheese, or marinated turkey breast.
