Povero Capitano del Palio Monferrato Dolcetto from Piedmont is a lively, light to medium-bodied red offering aromas of fresh red cherry, violets, and hints of wild blueberry. It's dry with soft tannins and vibrant acidity. Serve it lightly chilled with eggplant parmesan as the wine's bright fruit and energetic character will cut through the rich tomato sauce and melted cheese beautifully, or pair it with Chinese five-spice pork ribs where the wine's floral notes and juicy texture will complement the sweet and savory glaze perfectly. Alessio and Margherita Povero oversee winemaking and cellar operations at this certified organic family estate that traces its viticultural roots to 1837, though the modern winery was officially established in 1948 when grandfather Bartolomeo planted the first vineyard. The name "Capitano del Palio" honors the historic captain who led Asti's famous horse race procession from the 14th to 19th centuries, selecting the best flag-wavers and ensuring proper conduct of the event. Enjoy now or cellar for 1-2 years.

Dolcetto food pairings: eggplant parmesan, Chinese five-spice pork ribs, spicy Italian sausage pasta.
