Pierre Paillard Les Parcelles Bouzy Grand Cru Extra Brut from Champagne A.O.C. is a magnificently poised, medium-to-full-bodied grower Champagne made from 70% Pinot Noir and 30% Chardonnay, drawn from 22 individual parcels spread across the legendary south-facing slopes of Bouzy, one of the Montagne de Reims' most celebrated Grand Cru villages, where chalky limestone subsoils temper the opulence of sun-ripened Pinot Noir into something of rare structure and finesse. This sparkling wine is made using Méthode Traditionnelle, the traditional method of the second fermentation in the bottle, just as they do in the Champagne region. Fermented in oak and aged for a minimum of three years on the lees before disgorgement, it opens with a mesmerising nose of warm pastry, honeyed citrus peel, wild strawberry blossom, and a whisper of white pepper, while the palate is layered and vinous, with a pristine, pinpoint mousse, vibrant acidity, and a long, bone-dry finish lifted by a characteristic saline mineral thread. Winemakers and brothers Antoine and Quentin Paillard, representing the eighth generation of this remarkable family, have been farming their 11 hectares of Grand Cru vineyards organically since 2012 and have steadily elevated Maison Pierre Paillard into one of the grower Champagne movement's most admired names. The Paillard family's roots in Bouzy stretch back to 1768, when an ancestor first acquired vines here, and the estate's oldest parcels, planted in 1956, are still contributing massal-selected fruit to these extraordinary wines.

Champagne food pairings: pan-seared scallops with a truffle butter sauce, aged comté with honeycomb and toasted walnuts, roasted chicken with a lemon and tarragon cream sauce.
