Pierre Girardin Les Abeilles Chardonnay from the Jura region is an elegant, mineral-driven white wine revealing notes of golden apple, Meyer lemon, and delicate flint with subtle hints of toasted brioche. It's bone-dry and medium-bodied with vibrant acidity and crystalline purity that extends through to a long, refined finish. Serve it chilled with butter-poached lobster as the wine's bright citrus character and mineral backbone will complement the rich shellfish beautifully, or pair it with roasted chicken with herbs where the wine's pristine fruit and stony minerality will enhance the savory flavors. Pierre-Vincent Girardin, the 13th generation of his Burgundy winemaking family and one of the region's most talented young vignerons, crafts this wine from vines planted in 1959 using massal selection on poor Bajocian limestone soils in a south-facing plot. The wine is aged for 12 months in 456-liter oak barrels then 8 months in stainless steel, following what locals call the "Burgundian style" with less oxidative character than traditional Jura wines. This wine drinks beautifully now or can be enjoyed over the next 2-3 years.
