There is a little bit of Canada in this South African wine…Made by Nicholas Pearce & Will Predhomme with the team at Radford Dale, 11 Canadian sommeliers (including the sommelier from Les Cavistes that organized the South African wine tasting where I tasted this last week) participated in elaborating this blend. Whole cluster, old vine, wild fermented, its medium ruby in colour with medium intensity aromas and flavours of violet, red cherry, liquorice, pepper and leather. Dry with medium acidity, tannins, alcohol, body and finish. Could be carafed for an hour and could also be aged 5-6 years but so easily drinkable now. We had it paired with the Les Cavistes ‘amuses-bouche’ but would pair beautifully with a charcuterie board, grilled portobello mushrooms or anything with kalamata olives.
