Pascal Jolivet founded his Sancerre domaine in 1987 and has spent over 35 years refining his sourcing from plots across limestone, clay-limestone, and flint soils, each vinified separately before the final assemblage, and the result is a wine that consistently delivers both drive and texture. Brisk and focused with white grapefruit, fresh gooseberry, flint minerality, and dried white blossom, it opens to a linear, taut palate of lemon curd, green apple, and crushed chalk with a long vibrant finish and mouth-watering acidity. Drink it now through 2029 with grilled shellfish, mussel hotpot, or clams vongole.
