Pacha Mama Pinot Noir from the Yarra Valley in Victoria is a single-vineyard, medium-bodied red sourced from vines planted in 1994 in Cottles Bridge, their age lending a quiet intensity and depth that younger vines simply cannot replicate. It is 100% destemmed and aged in French oak with 20% new wood, giving it a subtle structural backbone without overwhelming the wine's inherent delicacy. Initially a touch reserved in the glass, it opens with some coaxing to reveal aromas of dried peach, pomegranate and a haunting suggestion of dried herbs, flowing into flavours of blood orange, clove and a savory thread of pine needle on the palate, all supported by polished tannins and a bright, energetic acidity that gives this wine real elegance and poise. It is bone dry and best served just below room temperature, drinking well now and rewarding cellaring through 2032. Winemaker Tim Mannix crafts this wine with a clear reverence for the Yarra Valley's capacity to produce Pinot Noir of genuine Burgundian grace, and the single vineyard focus gives each vintage a compelling sense of place. Serve it with roasted lamb with a herb crust and roasted garlic, where the wine's delicate structure and savoury undertones will complement the dish beautifully, or pour it alongside BBQ ribs with a tangy vinegar-based sauce, letting its bright acidity and earthy depth cut through the richness of the meat.
