This wine has a bright medium gold colour. The fermentation-sur-lie and bâtonnage technique used to make this white wine are evident immediately upon nosing it, with a clear nutty aroma. This wine displays a fresh scent of citrus pith, yellow flowers, dry grasses, and a touch of honey. It has a crisp and dry mouthfeel and plenty of persistent vivid acidity. This citrussy wine tastes a savoury on entry and ends with long bitter almond notes. Perhaps not an accessible sipping wine, although it is quite enjoyable on its own, this is a great wine to accompany food -- either to pair with green salads and vinaigrette, shellfish, or sharp cheeses; or to contrast a cream-based dishes such as pasta Alfredo or Poulet-aux-Herbes with béchamel. Oro de Castilla is made by Bodegas Hermanos del Villar in the Rueda DO region. Lees stirring (batonnage) was employed in making this wine to give it some complexity and fullness while it aged in stainless steel tanks. The wine was fermented with the grapes own wild yeasts. - Community Wine Reviews
