Odfjell Capítulo Flying Fish is a vibrant, medium-bodied red blend drawing from some of Chile's most characterful corners, anchored by old-vine Carignan from Maule Valley's Loncomilla alongside Cabernet Sauvignon, Malbec, and for the first time in this edition, Syrah from the cool coastal San Antonio Valley. The nose is expressive and aromatic, with crushed red cherry, wild bramble, dried lavender, and a hint of iron-tinged earth that speaks to the ancient soils these grapes come from. Dry and refreshingly structured, the palate offers firm, grippy tannins, bright acidity, and a savory, lingering finish that practically calls out for food. Serve it slightly below room temperature and enjoy it through 2028. Winemaker Francisca Palacios, who discovered her passion for winemaking through a single elective course at the Universidad de Chile and went on to work harvests at some of the country's top estates before joining Odfjell, brings a beautifully precise touch to this organically certified label. The winery was founded by Norwegian ship owner Dan Odfjell, who famously brought Norwegian Fjord horses to his Maipo Valley estate to work the certified organic and biodynamic vineyards without compacting the soil.

Food pairings: beef empanadas with chimichurri dipping sauce, lamb burgers with harissa and grilled flatbread, aged manchego with quince paste and marcona almonds.
