The yuzu fruit is notoriously hard to work with, its complex mix of flesh, seeds, and peel each carrying a different aromatic character, which is why the Nihon Sakari No.21 Yuzu Sake stands out, it incorporates all three during brewing and achieves a balance most fruit sake producers never reach. Tart yuzu rind, dried mandarin, and a cool herbal bitterness from the pith open the nose, while the palate is sweet and bright with candied citrus and a gently bitter finish that keeps it refreshing rather than cloying. Nihon Sakari has been brewing in the Nada district of Hyogo since 1889. Serve lightly chilled over ice on a warm summer evening.
