Mountadam's High Eden Estate Chardonnay from High Eden, Eden Valley, South Australia is an elegant, medium to full-bodied white wine offering notes of white peach, Meyer lemon, hazelnut and honeycomb. This dry wine displays creamy texture and vibrant minerality that will continue to develop over the next six years. Serve it chilled with butter-poached lobster as the wine's richness complements the succulent shellfish, or pair it with roasted chicken breast stuffed with spinach and feta where the wine's bright acidity balances the creamy filling. Winemaker Con Moshos crafts this Burgundian-style Chardonnay from high-altitude vineyards at 550 meters elevation, where cool nights and ancient soils create wines of remarkable finesse and mineral complexity that rival French benchmarks. Mountadam was established in 1972 by the late David Wynn, a pioneering figure who recognized the Eden Valley's potential for producing world-class cool-climate wines long before the region gained international recognition. This refined Chardonnay represents exceptional quality and will drink beautifully through 2031.
