Mountadam's Chardonnay from Eden Valley, South Australia is a luxurious, medium to full-bodied white wine showcasing notes of ripe pear, lemon curd, vanilla and roasted almond. This dry wine displays silky texture and bright acidity that will continue to integrate beautifully over the next seven years. Serve it chilled with pan-seared halibut with beurre blanc as the wine's richness complements the buttery sauce, or pair it with chicken Alfredo where the wine's creamy character mirrors the dish's indulgent texture. Winemaker Con Moshos ferments this Chardonnay in French oak barrels with partial malolactic fermentation and regular lees stirring, creating layers of complexity while maintaining the fruit's vibrancy. The Mountadam estate sits at high elevation in the cool-climate Eden Valley, where limestone-rich soils and dramatic temperature swings produce Chardonnay of remarkable elegance and aging potential. This opulent Chardonnay represents exceptional quality from one of Australia's most respected cool-climate producers and will drink beautifully through 2032.
