Mountadam Cabernet Sauvignon from the Eden Valley in South Australia is a serious, age-worthy red grown at around 550 metres above sea level, where the cool, high-altitude conditions slow ripening dramatically and produce a Cabernet of real tension, focus and complexity. Aged for up to 24 months in oak barrels, it is deep crimson in the glass and opens with a brooding, layered nose of dried mission fig, dark cocoa and a compelling suggestion of pressed violet, giving way on the palate to flavours of roasted coffee bean, smoked clove and a streak of iron-tinged mineral that runs through to a long, gripping finish underpinned by rich, chewy tannins and a bright, focused acidity. It is bone dry and full-bodied, best served at room temperature, and will reward patient cellaring well into 2035. Mountadam was founded in 1972 by the late Adam Wynn, a pioneering figure in Australian fine wine who recognized Eden Valley's extraordinary potential for elegant, cool-climate reds at a time when most of the wine world had its eyes firmly fixed elsewhere in South Australia. Serve it with a slow-braised lamb stew with root vegetables and red wine, where the wine's dark intensity and mineral backbone will weave seamlessly into the richness of the dish, or pair it with a bison burger topped with aged cheddar and caramelized onions, letting its firm tannins and smoky depth stand up magnificently to the bold, hearty flavours.
