The Michel Gassier Fleur de Syrah from Costières de Nîmes Rhône A.O.C. is a certified organic red fermented with native yeasts using a combination of whole-cluster and destemmed fruit, with half the wine aged nine months in seasoned oak barrique and the remainder rested in concrete tanks, a winemaking approach that winemaker Michel Gassier describes as the difference between a crockpot and a frying pan, each vessel drawing out a distinct dimension of the wine's character. It opens with an expressive nose of dark plum, crushed violet and a curl of Mediterranean scrubland, while the medium-bodied palate delivers bright flavors of ripe black cherry, dried thyme and a lively thread of ground black pepper, all framed by chewy, well-structured tannins and a long, mineral-kissed finish. It is bone dry and wonderfully vibrant, so serve it slightly below room temperature and enjoy now through 2032. Michel Gassier is a fourth-generation winemaker who left a successful sales career in Chicago to return to the family's sun-drenched estate, which sits in one of France's oldest wine-producing regions where carbon-dated grape seeds confirm that viticulture has been practiced since around 600 B.C. and whose wines were coveted by the popes of Avignon in the 1200s. In 2013, Michel Gassier was named one of five nominees for European Winery of the Year, a rare distinction that underscores the extraordinary quality coming from this still-underrated corner of the Rhône. Pour it alongside spice-braised lamb shoulder with harissa and roasted chickpeas, where the wine's peppery depth and dark fruit are a natural match for the bold, aromatic richness of the dish, or serve it with grilled pork chops rubbed in fennel and smoked paprika, letting the wine's chewy structure and earthy warmth rise beautifully to meet the char and spice of the grill.

Syrah food pairings: rare roast beef, spice-braised lamb, cheddar, grilled pork chops.
