The Mega Spileo Cuvée III from the mountain vineyards of Achaia, Peloponnese P.G.I. is a bold, organically farmed red blend of equal parts Cabernet Sauvignon and Mavrodaphne with a generous splash of Agiorgitiko, each variety vinified separately and aged eight months in new oak, opening with a brooding nose of dark preserved cherry, dried fig and a curl of warm clove, while the full-bodied palate delivers flavors of roasted plum, bitter cocoa and a thread of toasted hazelnut, all framed by plush tannins and a long, spiced finish. It is dry and generously structured, so serve it slightly below room temperature and enjoy now through 2028. The estate was founded in 1999 by brothers Giannis and Theodoros Anastasiou on land with a staggering viticultural history stretching back to the 15th century, when Benedictine monks at the nearby Mega Spileo monastery cultivated these same steep mountain slopes to produce wine for holy communion and to sustain pilgrims on their journey. The estate sits within the Chelmos-Vouraikos National Geopark, a Natura 2000 protected area, making it one of the most dramatically situated wineries on the planet, and its parent company CAVINO was honoured as the Best Greek Winery of 2009 by International Wine and Spirits magazine in the UK. Pour it alongside slow-braised lamb stew with tomatoes, olives and fresh oregano, where the wine's dark fruit and earthy spice mirror the deep, herby richness of the dish, or serve it with BBQ beef ribs glazed in a smoky pomegranate sauce, where the wine's plush tannins and roasted fruit are a natural match for the char of the grill.

Food pairings: BBQ ribs, lamb stew, rouladen.
