Marynissen Heritage Collection Bock Vineyard Ontario Chardonnay is a luscious, full-bodied single-vineyard white from one of Niagara-on-the-Lake's most historically significant estates, opening with a richly layered nose of ripe mango, baked golden apple, warm toasted brioche, vanilla cream, and a gentle cinnamon oak spice that speaks directly of its 14 months in French oak barrels. It is dry and sumptuously textured on the palate, with a generous, almost pillowy weight from whole-cluster pressing and barrel fermentation, balanced by a clean, refreshing acidity that keeps everything lifted and prevents the richness from ever feeling heavy. Winemaker Mitchell McCurdy, a Brock University graduate who was honoured with the university's 2023 Distinguished Graduate Award and brought his experience from multiple Niagara and British Columbia harvests to Marynissen's cellar, handpicked the fruit from the estate's Bock Vineyard and vinified it with the meticulous gentle handling that defines the house style. A remarkable piece of Niagara history: the Marynissen estate is home to the oldest commercial planting of Cabernet Sauvignon in Canada, planted by viticulture pioneer John Marynissen in 1978 when the experts of the day insisted European vinifera varieties could not survive Ontario's harsh winters, an act of quiet defiance that helped shape the entire province's wine future. Serve it at room temperature alongside a pan-seared chicken breast with a creamy wild mushroom and tarragon sauce, where the wine's buttery richness and oak spice will echo the earthiness of the dish beautifully, or with a butternut squash and sage risotto finished with Parmesan for a vegetarian match of equal elegance. Drink it over the next two to three years.
