Marchand Tawse's Aligoté from Burgundy is a concentrated, medium-bodied white wine offering notes of white blossoms, ripe quince, tangerine zest and toasted almond. This dry, organically grown wine displays silken texture and brilliant character that will continue to integrate over the next year. Serve it chilled with grilled whitefish as the wine's vibrant profile complements the delicate fish, or pair it with seafood pot pie where the wine's layered complexity balances the creamy filling. Winemaker Pascal Marchand crafts this sustainably grown wine from vines over a half-century old grown in a complex mix of limestone, clay and silty soils. The wine was matured eleven months in neutral French oak barrels, revealing charred oak and dried oregano notes. This great example of the "other white Burgundy" is a good option for escargot or creamy prawn linguine and represents excellent quality and will drink beautifully through 2027.
