The cuvée for Mandois Victor 2012 Champagne is produced from Chardonnay mainly sourced from the Côte des Blancs wine region from 50-year-old vines. Vibrant and youthful with a fine and persistent mousse of apple dumpling, peach, toasted nut and brioche flavours, lingering with a flinty mineral kiss on the palate. Gorgeous now. The wine was vinified in stainless steel tanks (70%) with the balance in oak barrels and spent nine years resting on its lees. Chill and enjoy with seafood dishes.
