This dry wine displays supple tannins and generous fruit that make it immediately approachable while offering excellent aging potential. Serve it at room temperature with eggplant parmigiana as the wine's acidity balances the melted mozzarella and tomato sauce, or pair it with herb-roasted guinea fowl where the wine's earthy complexity complements the gamey flavors. Winemaker Pasquale Pizzolo ferments this organic Montepulciano using indigenous yeasts and ages it in a combination of stainless steel and oak to preserve freshness while adding subtle spice.
