Luis Marin Amethyst Edition Garnacha D.O.P. from Cariñena, Spain is a medium-bodied, bone-dry red with aromas of ripe raspberry, dried violet, and a thread of warm spice. On the palate it's juicy and bright, with red cherry, fresh strawberry, and a savoury herbal note on the finish, all framed by light, silky tannins. The Marin family has been growing Garnacha in Cariñena since 1903 and today holds a permanent honorary position on the board of the D.O.P., which is the second oldest Denominación de Origen in Spain, established in 1932. The old vines for this wine grow at over 800 metres above sea level, where the strong Cierzo wind funnels down from the Ebro Valley, keeping the grapes cool and the skins thick. Cellar it through 2035 or open it now. Try it alongside grilled chicken thighs with smoked paprika and lemon, where the wine's red fruit echoes the char, or pull the cork with veggie burgers topped with roasted peppers and manchego for a casual pairing that works any night of the week.

Garnacha food pairings: grilled chicken breasts, veal cutlets, veggie burgers.
