Louis Bouillot's Flashback 1975 Crémant de Bourgogne from Burgundy is an opulent, medium to full-bodied sparkling wine blending Chardonnay and Pinot Noir with notes of baked apple, honeycomb, toasted hazelnut and warm spice. This sparkling wine is made using Méthode Traditionnelle or the traditional method of the second fermentation in the bottle, just as they do in the Champagne region. This dry sparkler spent nearly 100 months aging on its lees, developing remarkable complexity and a luxurious, creamy texture. Serve it well chilled with seared scallops in brown butter as the wine's richness matches the caramelized shellfish, or pair it with lobster bisque where the wine's silky character complements the velvety soup. Winemaker Hervé Lamy crafted this special cuvée to celebrate the 50th anniversary of the Crémant de Bourgogne AOC, which was established in 1975 and recognized Burgundy's centuries-old tradition of producing exceptional sparkling wines outside of Champagne. Louis Bouillot has been making traditional-method sparklers in Burgundy since 1877, maintaining the region's reputation for quality at accessible prices. This sophisticated Crémant represents exceptional value and will continue to develop through 2030.
