López Cristóbal La Colorada from Ribera del Duero is a polished, medium-bodied red offering aromas of tart wild cherry, dried lavender, and hints of crushed almond. It's dry with silky tannins and vibrant acidity. Serve it at room temperature with beef tenderloin as the wine's smooth texture and concentrated fruit will enhance the meat's savory richness beautifully, or pair it with aged sheep's milk cheese where the wine's refined structure and persistent finish will complement the cheese's crystalline, nutty depth perfectly. Founded by agricultural engineer Santiago López and his wife Lola Cristóbal in 1994, Bodegas López Cristóbal is now managed by their sons Galo and Francisco who have dedicated their lives to constantly improving their vineyards and winemaking processes. This wine is crafted from 100% Tinta del País (Tempranillo) from the single La Colorada vineyard at 790 meters elevation, where vines averaging 30 years old grow on limestone soils, and ages for 12 months in French (70%) and American (30%) oak barrels followed by another year in bottle. Enjoy now or cellar for 3-6 years.

Food pairings: beef tenderloin with peppercorn sauce, aged sheep's milk cheese, roasted lamb shoulder.
