From Madiran’s storied terroir in Viella, C. & M. Bortolussi & Osmin’s red blend leans heavily on Tannat, bolstered by Cabernets and the local Pinenc grape. Deep ruby in color, it opens with ripe blackberries, cassis and a whisper of smoked herbs. The palate is powerfully structured—spicy, fine-grained tannins frame layers of dark fruit, black pepper and licorice, all riding on a firm, age-worthy core. Best enjoyed from 2026, when its muscular grip softens and the fruit gains full harmony. Serve with char-grilled ribeye and chimichurri, slow-roasted lamb shoulder or blue-cheese–drizzled flatbreads.

Food pairings: grilled game, pot roast, grilled mushroom burgers.
