Small-batch, low volume but high quality, slightly off the beaten path in Milford, Lighthall Vineyards uses a concrete fermentation vessel for their reds and ages their wines on the lees. For this Chardonnay they combine oak and steel fermentation combined with newer barrels. And the beautiful insect on the label? A Luna Moth - which has a lifespan of 7 - 10 days and can be seen, if lucky enough, around their vines. Glenn, pharmacist turned winemaker, found that the outer edges of its intricate wings were reminiscent of vines. This stellar County Chardonnay has a crisp minerality, notes of salted butter and ripe fruit. Perfect freshness, paired tonight with simple shucked oysters with a splash of lemon juice and the tiniest drop of hot sauce and the amazing Gouda (sheep’s milk) from Lighthall. Slightly unconventional and absolutely perfect.
