I opened a bottle of this 2014 single vineyard, traditional method bubbly in Spring 2022 to find plenty to like inside.

Crafted with nothing but Chardonnay, its aromas are pleasingly fresh and crisp, evoking lovely lemon zest teamed up with almonds and biscuit, while its delicate, delicious flavours tilt decisively to orange citrus and saline. For me, the structure is appealing because it is light touch coarseness, ultra-dry, tongue teasing, with amped up acidity.

Salty foods would pair nicely with this creation from Nova Scotia Canada’s Annapolis Valley. Enjoy.
