Libre y Salvaje Vino de Paraje from Cariñena is a vibrant, medium-bodied red offering aromas of crushed wild berries, sun-dried plum, and hints of warm earth. It's dry with polished tannins and lively acidity. Serve it lightly chilled with roasted duck breast as the wine's juicy fruit and silky texture will enhance the rich, savory meat beautifully, or pair it with chorizo and aged Manchego where the wine's concentrated flavors and persistent finish will complement the spicy, nutty character perfectly. Winemaker José Ignacio Marín, working alongside his sister Ángela, founded Libre y Salvaje to recover high-altitude vineyards planted with old indigenous vines and restore a historic winery built atop ancient caves in Almonacid de la Sierra. The family has been growing grapes and making wine in Cariñena for generations, and José's minimal intervention philosophy follows organic principles, using spontaneous fermentation and aging in wooden foudres, concrete vats, and clay jars to achieve maximum expression of the terroir.
