Generous aromas of baked bread, butterscotch, ripe pears and peaches on the nose. On the palate, there’s an incredibly deep minerality and structure, with voluptuous layers of flavor and a long toffee-noted finish. One of Canada’s most promising cult wines.

Chardonnay food pairings: baked ricotta on toast, stir-fried vegetables, turkey scaoppini, Asian dishes with black bean sauce, French vanilla pudding.

This is the wine I chose as my birthday wine this year, and it did not disappoint. It was a gorgeous deep yellow color in the glass and very fruity on the nose, however, there is no missing the flint and limestone aromas. On the palate big bold flavors of melon and butter with a nice lingering finish. I had this with Maple Dijon chicken and honey roasted potatoes and it was heaven on the tastebuds.
