Very yeasty with freshly baked bread and brioche notes. Some golden apple and toasted almond. Lovely and mature. Pair with oysters.

Champagne food pairings: raw oysters on the half shell with a champagne mignonette, shrimp and crab cakes, smoked salmon and caviar crepes.

Lots of secondary aromas along with binned apples from the Chardonnay element. This one is a full-flavoured Champagne some richness and roundness from the age. Good length of flavours. This is what Champagne should always be like.

Laherte Les Empreintes Extra Brut (2010) is a Champagne made from old-vine Chardonnay and Pinot Noir grapes sourced from the Chemins d'Epernay lieu-dit planted in 1957; the Pinot Noir is from Les Rouge Maisons, which was planted in 1983. Disgorged in October 2014. - Community Wine Reviews
