La Sala del Torriano Campo all'Albero from Tuscany is a lush, full-bodied red showcasing aromas of baked plum, leather, and hints of sweet spice. It's dry with velvety tannins and concentrated dark fruit flavors. Serve it slightly below room temperature with braised beef short ribs as the wine's silky texture and rich depth will meld beautifully with the tender meat and savory jus, or pair it with aged Pecorino Toscano cheese where the wine's complex finish and smooth structure will enhance the cheese's nutty, earthy character perfectly. Winemaker Ovidio Mugnaini, who learned his craft from his grandfather Ezio (a winemaker for 75 years), works alongside consulting agronomist Stefano di Blasi to produce this wine from equal parts Merlot and Cabernet Sauvignon that are aged for 24 months in French oak barrels. Francesco Rossi Ferrini acquired La Sala in 2014, merging it with his family's Il Torriano estate to create one of Chianti Classico's most distinguished organic producers, a property with winemaking roots tracing back to the medieval era when it was known as "Grande Terra Murata." Enjoy now or cellar for 3-4 years.
