La Roselière Côtes Du Rhône-Villages Laudun offers concentrated aromas of cassis, Mediterranean scrub and crushed pepper. It's dry and medium-to-full bodied with supple tannins. Serve it at room temperature with herb-crusted rack of lamb where the wine's savory character complements the rosemary and garlic while its structure balances the meat's richness, or cellar it through 2031. Winemaker Frédéric Arnaud and his wife Joséphine, both qualified oenologists, purchased Château Courac in 1995 and cultivate vines on land in Laudun where Romans first established vineyards after arriving in southern France—archaeological discoveries of ancient wine-making vessels still dot the hillside property. This versatile wine also pairs beautifully with roasted duck breast with cherry reduction, where the wine's dark fruit echoes the sauce while its peppery notes cut through the bird's rich flavors.

Food pairings: rack of lamb, grilled game sausages, roast duck.
