La Pieve Barolo is a dry, full-bodied 100% Nebbiolo from Piedmont's most celebrated DOCG that pours a luminous garnet-ruby with the characteristic brick-tinged rim of the variety, offering an intricate nose of macerated sour cherry, dried rose hip and wild fennel pollen, layered with enticing notes of tar, worn leather and a thread of woodsmoke that signals the wine's 26 months in barrel. The palate is structured yet seductive, with the hallmark firm, grippy tannins of Nebbiolo softened by age and given life by Barolo's soaring natural acidity, carrying through to a long, earthy finish with notes of iron and dried fig. Serve it at room temperature and drink from now through 2035, though this wine will reward another decade of cellaring. Winemaker Marziano Abbona, whose family has cultivated vines in the Langhe hills since the early twentieth century, crafts this Barolo from 35-year-old vines that are bottled without filtration to preserve every nuance of the Piedmontese terroir, a detail that speaks to his deeply traditional philosophy. The Langhe hills where these vines grow were inscribed as a UNESCO World Heritage Site in 2014, a recognition of the extraordinary winemaking culture that has shaped this landscape for centuries. Pour this alongside a slow-braised osso bucco with gremolata, where the wine's earthy grip and cherry brightness rise to meet every rich, bone-deep bite, or serve it with a wild mushroom and truffle risotto for an indulgent Piedmontese pairing.

Food pairings: Osso Bucco, risotto Milanese, Milanese-style veal cutlets.
