La Junta Amigo Perro Cabernet Sauvignon from Curicó Valley opens with aromas of ripe blackberry, dark plum, toasted oak, and dried sage with hints of espresso and sweet tobacco. Dry and medium-bodied with sleek, polished tannins, it flows across the palate with excellent persistence and closes with a smooth, approachable finish. Serve it slightly below room temperature or cellar it through 2029. Ricardo Perez-Cruz, who leads the enological team at La Junta, is a fervent admirer of Chilean viticulture with over fifteen years of winemaking experience both in Chile and as a technical advisor in Spain's Aragon region. The winery is located in the Sagrada Familia Valley where the dramatic daytime-nighttime temperature oscillation of more than 18°C creates ideal ripening conditions, and the estate's 2,000 square meter facility uses gravity-fed processing to ensure gentle handling of the fruit. Pair this balanced red with grilled ribeye steak where the wine's smooth tannins complement the charred, savory flavors, or enjoy it with mushroom and beef burgers topped with aged cheddar as the wine's sleek texture enhances the umami-rich meat.

Cabernet Sauvignon food pairings: grilled ribeye steak, mushroom and beef burgers with aged cheddar, herb-roasted chicken.
