La Chablisienne Le Finage Chablis A.O.C. is a bone-dry, medium-bodied 100% Chardonnay fermented in stainless steel and aged six months on its fine lees, which adds texture and roundness without masking Chablis's signature character. On the nose it's focused and precise, with white grapefruit, crushed oyster shell, dried white blossom, and a cool saline edge. On the palate it's taut and linear, with lemon curd, green apple, white nectarine, and a long mineral-driven finish with bracing, food-friendly acidity. Oenologist Vincent Bartement was named IWC White Winemaker of the Year three times, in 2014, 2016, and 2020, and in 2024 the cooperative took home the IWSC White Wine Producer Trophy. La Chablisienne was founded in 1923 by a group of Chablis growers during a period of economic hardship, and today its 250 member families farm 1,200 hectares, representing nearly a quarter of all Chablis vineyard land. Drink it now through 2029. Pour it alongside oysters Rockefeller, where the wine's saline minerality is a textbook match to the briny shellfish, or try it with poached salmon in a white wine sauce where the wine's bright acidity lifts the dish.
