This South African sparkling wine was made using the Méthode Cap Classique, which is similar to the Méthode Traditionnelle used in the Champagne region, with the second fermentation taking place in the bottle. Krone Borealis Vintage Brut from the Twee Jonge Gezellen estate in Tulbagh is crafted from Pinot Noir and Chardonnay, matured on its lees in an underground cellar and released only as a vintage-dated wine. On the nose it's lifted and precise, with white nectarine, fresh brioche, crushed limestone, and a cool saline edge. On the palate it's taut and energetic, with green apple, lemon curd, dried apricot, and a long, mineral-driven finish with fine persistent bubbles. Cellarmaster Rudiger Gretschel oversees production at the 300-year-old Twee Jonge Gezellen estate, which dates to 1710 when two bachelor cousins established the farm, its Dutch name meaning "two young bachelors." The estate pioneered cold fermentation in the 1950s and introduced night harvesting in the 1980s to preserve aromatics and freshness. Drink it now through 2030. Pour it alongside smoked salmon with crème fraîche and capers, where the wine's saline mineral edge is a textbook pairing, or try it with sashimi where the fine acidity and citrus notes tie beautifully to the clean fish.
