Junmai Daiginjo sits at the top of the sake pyramid, meaning the rice has been polished down substantially before brewing. Koshinoiso's version, made in Hyogo, is delicate and fragrant. White flower and ripe pear aromas open things up, and a clean rice sweetness carries through a silky, light-bodied palate. The finish fades gently rather than lingering. Serve it cool rather than fully cold, so the aromatics have room to open up. A sashimi platter or a delicate tofu steak would make a graceful match. There's something fitting about a sake this refined pairing best with food that knows to stay out of its way.

Sake food pairings: sashimi platter, lobster tempura, tofu steak.

The Financial Times of London

There are very few people in the wine world who "get it" and Natalie is one of those who brings more fun to a buttoned-up and stodgy game.
