Kew Tradition Sparkling from Ontario V.Q.A. is a dry, light-to-medium-bodied traditional method sparkling wine of genuine elegance and depth, made using the same Méthode Traditionnelle as they do in the Champagne region, with secondary fermentation in the bottle, and blending Pinot Noir, Chardonnay, Pinot Meunier and Pinot Blanc from Kew's single vineyard on the Beamsville Bench, where vines dating to 1975 rank among the oldest in all of Niagara. After a remarkable five years aging on its lees, the wine emerges with a fine, persistent bead and a compelling nose of warm toasted almond, honeyed nectarine, fresh lemon zest, dried chamomile and a streak of cool limestone minerality that carries through to a creamy, well-structured palate with lovely tension and a long, satisfying finish. Kew's property traces its roots to the Victorian-era Kew homestead built by William Kew, and it was in 1975 that German viticulture pioneer Hermann Weis first planted Riesling clones from his homeland on this estate, making it a true founding site of modern Ontario winemaking. The estate's sparkling program has earned recognition at the Ontario Wine Awards, where a Kew Pinot Meunier sparkling took Silver in the Traditional Method category, cementing the winery's reputation as one of Niagara's most dedicated and accomplished producers of bottle-fermented bubbles. Serve it well chilled alongside pan-fried halibut in beurre blanc, where the wine's creamy texture and zesty acidity dance with the richness of the butter sauce; it is equally delightful with crispy fish tacos loaded with lime crema and pickled cabbage, the wine's fine bubbles and mineral lift refreshing the palate beautifully with every bite. Cellar through 2034.
