Joseph Drouhin's Drouhin-Vaudon Chablis from Burgundy is a crisp, medium-bodied white wine showcasing notes of green apple, lemon, oyster shell and flinty minerality. This dry wine displays bright acidity and elegant structure that will continue to develop over the next five years. Serve it well chilled with raw oysters as the wine's saline character mirrors the briny shellfish, or pair it with poached salmon with dill cream sauce where the wine's steely freshness cuts through the richness. Winemaker Véronique Boss-Drouhin crafts this classic Chablis from vineyards planted on ancient Kimmeridgian limestone soils composed of millions of tiny fossilized oyster shells, imparting the wine's distinctive mineral complexity. The Drouhin family acquired Domaine Drouhin-Vaudon in 1968 and has been producing benchmark Chablis for over five decades, maintaining the region's reputation for pure, terroir-driven Chardonnay. This elegant Chablis represents excellent quality and will drink beautifully through 2030.
