It might still be a bit warm to get out the cheese fondue set, but this Chasselas is the perfect wine if you are so inclined. The key to Chasselas with this heavy cheese dish is the gentle, ripe fruits and zippy acidity, both on ample display here. If you don’t want to get the pot and burner out, think raclette dish instead where all that cheese is nicely off set by potatoes, gherkins, dried meats and pickled onions. Chasselas is also very fresh and vibrant for sipping on its own. Source: Vintages Wine Panel
