The 2023 Glorie De Chablis from J. Moreau & Fils is a vibrant and refreshing Chardonnay, sourced from vines rooted in the distinctive Kimmeridgian soils, rich in Jurassic-era fossilized oyster shells. This adds a characteristic minerality that gives the wine its signature briny edge. Fresh aromas of green apple, pear, and subtle citrus lead to a palate with lively lemon-lime zest, hints of pineapple, and a fine herbal note. The wine’s balance is further enhanced by eight months of lees aging in stainless-steel tanks, lending it a creamy texture and added complexity. This wine is perfectly suited to seafood dishes, such as lemon butter lobster, sautéed sea scallops, or oyster poor boy sandwiches. Drink through 2028.
