J. Moreau & Fils Glorie Chablis is a mouth-watering Chardonnay sourced from vines growing in Kimmeridgean soils from the Upper Jurassic epoch, around 150 million years ago. Sub-soils are of gray marl streaked with limestone and fossils of Exogyra virgula, a small comma-shaped oyster. Look for bright green apple, peach, nectarine, fine herbs, lemon-lime zest flavours vibrant on the palate and finishing on a flinty mineral note. This wine was forged in stainless steel and rested on its lees for eight months giving it added freshness, structure and finesse. Chill and enjoy it with seared tuna steaks.

Chablis food pairings: lemon butter lobster, sautéed sea scallops, oyster poor boy sandwiches.
