Moreau & Fils Glorie de Chablis is a dry, medium-bodied Chardonnay sourced from vines rooted in distinctive Kimmeridgian soils rich in Jurassic-era fossilized oyster shells, revealing fresh aromas of green apple, Asian pear and subtle grapefruit with lively lime-lemon zest, hints of guava and a fine herbal note balanced by eight months of lees aging in stainless steel tanks. Serve it chilled with pan-seared halibut with lemon-caper butter, where the wine's characteristic saline minerality and bright, zesty acidity complement the delicate fish while its silky texture stands up to the rich sauce, or pair it with fresh oysters on the half shell as the wine's saline edge echoes the ocean-fresh flavors that come from the same ancient marine origins. Winemaker Jean-Baptiste Bejot oversees production at J. Moreau & Fils, a historic Chablis house founded in 1814 that has been crafting classic, terroir-driven wines for over two centuries, with the sharply defined citrus and apple character showcasing the region's noted minerality. This vibrant wine is perfectly suited to seafood dishes and can be enjoyed now or cellared through 2029.
