Hinterbrook Nomad Merlot is a warmly generous, barrel-aged red from the Lakeshore Region of Niagara-on-the-Lake, where the moderating influence of Lake Ontario gives Bordeaux varieties the long, even growing seasons they need to develop real depth and character. Aged for a full 24 months in French oak, the wine opens with an inviting bouquet of ripe dark cherry, dried blackberry, warm baking spice, and a whisper of dark chocolate, with a subtle savory herb note adding welcome complexity. On the palate it is medium-to-full-bodied, bone dry, and generously textured, with rounded tannins, a smooth, approachable finish, and just enough structure to reward a few more years in the cellar through 2032. Serve it slightly below room temperature. One of the most distinctive features of Hinterbrook is its genuine commitment to environmental stewardship, with the winery powered by solar energy and geothermal climate control while incorporating water-recycling technology, making it one of Ontario's most sustainably run estates. The NOMAD label itself carries a thoughtful philosophy, inviting wine lovers to treat the nearly blank label as a canvas to record their own stories and experiences, a concept rooted in the winery's belief that wine is ultimately a vehicle for human connection and memory.

Merlot food pairings: beef tenderloin with a red wine mushroom sauce, roasted duck with cherry compote and roasted fingerling potatoes, lamb and eggplant moussaka with a béchamel crust.

There are very few people in the wine world who "get it" and Natalie is one of those who brings more fun to a buttoned-up and stodgy game.
