Hinterbrook Nomad Humble Cabernet Sauvignon-Merlot from Niagara-on-the-Lake is a polished, medium-bodied red offering aromas of ripe blackcurrant, dried sage, and hints of toasted oak. It's dry with structured tannins and vibrant acidity. Serve it at room temperature with pan-seared duck breast as the wine's concentrated fruit and herbal complexity will enhance the rich, crispy skin beautifully, or pair it with aged cheddar where the wine's firm structure and persistent finish will complement the cheese's sharp depth perfectly. Winemaker Natalie Spytkowsky, working with her Vines to Vintages winemaking team, crafts this wine for owners Phil and Charlotte Nickel at their solar-powered, geothermal-cooled facility that operates with a near-zero carbon footprint. First planted with vinifera grapes in 1998, the 29-acre estate sits on land originally homesteaded in 1789 by the Servos family, United Empire Loyalists who served with Butler's Rangers during the American Revolutionary War, and the winery's commitment to ecological sustainability includes rainwater collection and ozone sterilization. Enjoy now or cellar for 3-6 years.

Food pairings: pan-seared duck breast, aged cheddar cheese, beef tenderloin with mushrooms.

The Financial Times of London

There are very few people in the wine world who "get it" and Natalie is one of those who brings more fun to a buttoned-up and stodgy game.
