Hidden Bench Riesling is a graceful, off-dry Ontario white from the Beamsville Bench on the Niagara Escarpment, one of Canada's most celebrated cool-climate terroirs for producing Riesling of genuine depth and European-inspired elegance. It is light-to-medium-bodied and notably low in alcohol at just 11%, with a beautifully composed nose of white peach, dried mango, orange blossom, and a delicate floral sweetness that floats above a cool, steely mineral foundation with quiet confidence. The palate is juicy and refreshingly crisp, with a lively, mouth-cleansing acidity, a gentle honeyed mid-palate, and a lingering floral finish that fades with lovely grace and precision. Serve it well chilled and enjoy through 2028, as the wine's fine acidity and off-dry balance give it the structure to develop beautifully over several more years in the cellar. Hidden Bench is one of the Niagara Escarpment's most admired certified organic estates, and winemaker Harald Thiel has built a remarkable reputation for crafting Rieslings that capture the tension between ripe fruit generosity and cool-climate mineral precision that defines the very best examples from the Beamsville Bench. The estate earned a commendation from the prestigious Decanter World Wine Awards, one of the wine world's most competitive international competitions, further cementing its standing among Canada's finest producers. Pair it with a golden roast chicken glazed with honey and fresh thyme, where the wine's gentle sweetness and citrus lift will echo the caramelized pan juices with lovely harmony, or serve it alongside a grilled salmon fillet with a warm lemon butter sauce and a scattering of fresh dill for a beautifully complementary spring dinner.
