Hervé Azo's Chablis from Burgundy is a pristine, unoaked expression of Chardonnay drawn from 30-year-old vines rooted in the region's celebrated Kimmeridgian limestone soils, delivering an elegant, medium-bodied white that is razor-dry and refreshingly light on its feet. The nose opens with delicate notes of green apple skin, crushed oyster shell, and white blossom, while the palate reveals a brisk, saline-edged acidity woven through with hints of zesty grapefruit and a whisper of toasted sesame. Since the alcohol comes in at just 12.5%, this wine has a particularly nimble, food-friendly energy that makes it endlessly versatile at the table. Aged for nine months on the lees in stainless steel, it develops a subtle creamy texture without sacrificing the laser-focused minerality that defines great Chablis, and is best enjoyed well chilled to showcase that vivid, stony freshness. The Bocard family, who have been producing Chablis since 1973, brought winemaker Hervé Azo into the fold to carry that legacy of understated, terroir-driven winemaking forward. Drink it now through 2029, or pair it with golden-fried crab cakes alongside a lemon herb aioli, where the wine's saline spine mirrors the briny sweetness of the crab, or serve it with a simple roast pork tenderloin with apple chutney, letting the wine's crisp acidity lift every bite.
