Tanadamai means 'terraced rice' in Japanese, a direct reference to the mountain-terrace Gohyakumangoku rice plantings in the Hakusan foothills that give this Hanagaki Junmai Daiginjo its clean, crisp foundation. Perfumed and subtle on the nose with fresh green melon and dried white blossom, it opens to a light, elegant palate of lychee, rice cream, and a long, clean finish with gentle acidity. The medium-dry style sits comfortably between the richness of a dessert sake and the austerity of a fully dry expression. Serve it well chilled at brunch alongside a cheese omelette.
