Hanagaki Junmai Nigori Sake from Japan is a naturally cloudy sake that should be gently shaken before opening, offering a smooth and velvety texture with delicate, balanced sweetness and no added alcohol as indicated by the Junmai designation. Serve it warmed with fresh sashimi and pickled ginger, where the sake's gentle sweetness complements the clean fish flavors while its luscious texture mirrors the silky raw fish, or pair it with spicy tuna rolls as the sake's mellow character cools the heat while its subtle grain sweetness balances the wasabi's bite. Toji (master brewer) Takeshi Yamada crafts this traditional sake at the Hanagaki brewery in Fukui Prefecture, a historic sake house founded in 1884 that continues to use centuries-old methods including washing rice by hand and carefully controlling fermentation temperatures. The nigori style, which retains rice sediment for a cloudy appearance and richer mouthfeel, has been enjoyed in Japan for over a thousand years and represents one of sake's most ancient and beloved forms.
