Hyogo Prefecture's Yamada Nishiki rice, prized above nearly every other variety for sake brewing, is the backbone of this Tokubetsu Junmai from Hakutsuru. Steamed grain and a light savoury depth carry real weight for the style, finishing clean and quick rather than lingering, which makes it easy to keep pouring through a meal. Hakutsuru suggests serving it chilled in warmer months and gently warmed once the weather turns cool. Try it with sushi or a plate of grilled fish.
