This pale straw Sauvignon Blanc leaps from the glass with tart gooseberry, crisp Granny Smith apple and a hint of passionfruit perfume, underscored by fresh-mown lawn and bell-pepper leaf aromas. On the palate it’s vibrant and energetic, unfolding crunchy green-apple flesh, verdant capsicum and a kiss of tropical sweetness, all carried along a zesty, mouthwatering spine that leads into a long, chalk-clean finish. Best enjoyed between now and 2028, it pairs beautifully with oysters dressed in shallot-vinegar mignonette, goat-cheese tartlets sprinkled with chives or avocado-shrimp ceviche brightened with lime and cilantro.
